Baked Beetroot

This was such a lovely surprise. It makes a great side with roasts or steak.

Time: 1 hour 15min  Portions: 4


6-8 Medium beetroots
2 tbls Fresh Thyme
2 tbls Dried herbs (mixed)
Salt & Black pepper
45ml Olive oil
45ml Balsamic vinegar
3 Garlic cloves
Cream cheese
Pecan nuts


Preheat oven to 180°C. Peel and spice beetroots with salt and pepper. Wrap each one in foil with a thyme sprig. Place in oven for 30min. Add garlic cloves and bake for another 30min.

Peel and chop garlic cloves. Mix olive oil, balsamic vinegar and garlic. Mix cream cheese with dried herb mix. Cut beetroot into 3 slices, layering them with cream cheese mix. Drizzle with balsamic mix and sprinkle with chopped pecan nuts.
