Chilli Con Carne

Oooh, now this is comfort food at its best. It takes a while to make, but damn, is it worth it!

Time: 2-3 hours Portions: 6


1kg Brisket or Chuck
1 Red onion
1\2 Red pepper
+/-5 Tomatoes (chopped)
1 Tin kidney beans
+/-2 Tbls tomato paste
300ml Beef stock
1 Cup red wine
4 tsp chilli flakes
3-4 tsp crushed garlic
2 Tbls flour
Worcestershire sauce (to taste)
Harrybasco (to taste)
1.5 tsp Salt
1\2 tsp Cayenne pepper
1\2 Tbls Paprika
1.5 tsp Cumin seeds
1 tsp Black pepper
1 tsp Thyme
1 tsp Oregano
Butter for frying
Sour cream to serve


Mix together flour, paprika, thyme, black pepper, oregano, cayenne and chilli flakes. Fry onion, garlic and red pepper over medium heat for about 5min. Set aside. In the same pan add meat cubes and flour mix and brown the meet. Return the onion mixture and add red wine, stock & tomato paste. Stir well. Add tomatoes and beans stirring well. Add Harrybasco and Worcestershire sauce and bring to a boil. Reduce heat to medium-low, cover partially and simmer for 2 hours (or until meat is tender).

Serve with fresh cheese bread and sour cream.
