Portuguese Custard Puffs

These have always been a favourite of mine. Handy tip…make extra!

Time: 45min  Portions: 24


1 Cup white sugar
1\2 Cup water
1\4 Cup corn flour
2 Cups full cream milk
1\2 Cup cream
3 Egg yolks (beaten)
4 Sheets of puff pastry
Icing sugar to sprinkle on top


Preheat oven to 200°C. Place sugar and water in a sauce pan over medium heat. Stir until sugar dissolves. Allow to boil for 3min without stirring. Remove from heat. Combine corn flour, milk & cream. Mix well. Add egg yolks and whisk well. Add the sugar mix a little at a time while whisking. Pour the mixture back into the sauce pan and cook over medium heat, stirring until mixture comes to a boil. Remove from heat and allow to cool.

Roll out pastry sheets and cut 6cm circles. Place them in your muffin pan. Prick each of them with a fork and then fill them half way with custard. Bake for 20-25min. Remove immediately. Sprinkle with icing sugar and serve warm.
