Banana Bread Muffins

Think banana bread, but in muffin form! It’s awesome with butter, warm from the oven. You can also use the same recipe to make a normal banana bread. Whatever works for you. Please note: I used a coffee mug instead of a cup.

Ingredients

1\2 Mug self-rising flour
1 tsp Baking soda
1\2 Mug sugar
1\2 Mug butter (melted)
2-3 Bananas
2 tsp Vanilla essence
Pinch of cinnamon
Pinch of salt
1 Egg (beaten)

Method

Preheat oven to 180°C. Chop the bananas up into smaller pieces. Mix everything together with a hand mixer. Fill a muffin tin half way and bake for 45min to 1 hour depending on your oven. Allow to cool for 5min before removing from the tin.
