Beetroot Avo Feta Salad

Such a nice summer salad. You can use preserved beetroot, but I prefer to use fresh ones.

Time: 25min  Portions: 4


5-6 Medium beetroot
2 Medium avocados
100g Feta (a wheel)
45ml Olive oil
45ml Balsamic vinegar
1/2 tsp Crushed garlic
Pinch of dried rosemary


Boil the beetroot in a medium pot for 15-20min. Allow to cool and peel them. Chop them into little blocks. Slice the avo into little blocks and combine with beetroot. Break the feta into it and mix well.

Combine olive oil, balsamic, garlic and rosemary. Drizzle over the salad.
