Oatmeal Cookies

I’m a little addicted to these. The problem is, if you buy them from a shop they cost a fortune and it’s never quite enough. That’s where this recipe comes in. They are crunchy and sweet, quick to make and sooo very good. Hope you enjoy them.

Time: 30min  Portions: 24


1 Cup flour
1 Cup oats
1 Cup coconut
1\2 Cup caster sugar
200ml Butter
2 Tbls Golden syrup
1.5 tsp Baking soda
2 tsp Vanilla essence


Preheat oven to 180°C. In a saucepan over medium heat, melt butter and syrup stirring continuously. Once butter has melted completely, add baking soda and stir well. It will start to rise up. Remove from heat. Sift flour into a mixing bowl. Add sugar, oats and coconut. Add the butter mixture and vanilla and mix well with a spoon. Once mixed, make tablespoon sized balls, slightly flattened, and place on a lined baking tray. They spread quite a bit when baking, so make sure that you leave enough space between them. Bake for 15-20min. Remove and allow to cool for 10min.
