Hasselback Potatoes

First time trying these, and they are stupidly good.

Time: 1 hour 10min  Portions: 4


8 Medium potatoes
1/4 Cup butter (softened)
2 tbls Olive oil
Black pepper
Sea salt
2-3 tbls Parmesan cheese (powdered)
170g Cream cheese
Dried Sweet basil


Preheat oven to 220°C. Cut your potatoes into thin strips* (be careful not to cut all the way through). Mix together the softened butter, olive oil and black pepper. Place your potatoes on a baking sheet and cover with the butter mixture. Grind some salt on top and cover with Parmesan. Bake for 1 hour. Remove from oven and scoop the melted butter from the pan over the potatoes.

Serve with cream cheese and sweet basil.

*Place the potato between two wooden spoons to make sure you don’t cut them all the way through.
