Cream Cheese Sweet Potatoes

This sounds weird, but trust me, it’s delicious!

Time: 1 hour  Portions: 4

Ingredients:

4 Medium Sweet potatoes
1/2 Cup butter
1 tsp Thyme
220ml Cream cheese
2 tbls Olive oil

Method:

Preheat oven to 220°C. Place the sweet potatoes on a baking tray and sprinkle with olive oil. Bake for 1 hour. In a pan over medium heat, melt butter. Add the thyme and stir well. Set aside. Remove the sweet potatoes and split in half. Cover with cream cheese, pour butter mixture over it.
