Parmesan Potatoes

Yes, that’s right, another potato dish. ‘Cause hello, potatoes!

Time: 1 hour 15min  Portions: 4


8 Medium potatoes
3/4 Cup parmesan cheese (finely grated)
1 tsp Sea salt
1 tsp Black pepper
1 tbls Flour
2 tbls Oil
1 tsp Crushed garlic
1/2 tsp Paprika
Dried Sweet Basil

For the sauce:
250ml Cream
2 tsp Lemon juice
1 tsp Harrybasco
1 tsp Black pepper


Start with the sauce. Add the lemon juice and whisk the cream until it thickens. Add the Harrybasco and pepper. Mix it through with a spoon, but don’t over mix. Refrigerate until you’re ready to serve.

Preheat oven to 200°C. Pour the oil into a baking tray to cover the bottom. Slice each potato into 3 slices. In a bowl, mix together the Parmesan, flour, black pepper and paprika. Dip each slice in the mixture and place coated side down into the pan. With the middle slices, cover both sides. Sprinkle garlic on top of the double sided slices. Place in the oven and bake for 1 hour. Sprinkle with sweet basil. Allow to cool for a bit before serving with the sauce.
