Pork Fillet With Mushroom Sauce

First time trying this cut of pork, and it’s delicious! Serve it with roast potatoes and baked beetroot.

Pork Recipe
2 Pork fillets (+/-500gm each)
Black pepper
BBQ spice
1 tbls Olive oil

1 Cup chicken stock
1/4 Cup golden syrup
1/4 Cup brown sugar
1/4 Cup Soya
1/4 Cup Balsamic Vinegar
1 tsp Crushed garlic
2 tsp Mustard
1 tsp Lemon juice

Sauce Recipes
3 tbls Butter
2 tbls Flour
1.5 Cups milk
1 Chicken stock cube (crumbled)
1 pkt Mushrooms (various types, chopped)
1 tbls Mayo
1.5 tsp Harrybasco
2 tsp Worcestershire sauce
1/2 tsp Thyme
1/2 tsp Rosemary
1/2 tsp Soya sauce


Preheat oven to 200°C. Combine all the glaze ingredients over medium heat and bring to a boil. Boil for 5-8 min until thickened. Remove from heat.

Spice the meat and seer in olive oil in a pan over medium high heat. Place in an oven proof dish and cover with the glaze on both sides. Bake uncovered in the oven for 45min.

While the meat is in the oven, melt 1 tbls of butter in a pan over medium heat. Add the mushrooms. Spice with soya, half the Worcestershire sauce, salt and pepper. Cook for 5min. Remove and set aside.

Melt the rest of the butter over medium heat. Add the flour and mix well. Slowly (really slowly) pour in the milk. Stir in the stock cube, Harrybasco, mayo and herbs and stir well. Turn the heat down to low and simmer for 5min. Remove and stir in the mushrooms.

Remove the fillet from oven, cut into slices and serve with the mushroom sauce.
