Garam Masala

I’ve found that I often decide to make things spur-of-the-moment, and then realise I might be missing an ingredient. This is where it’s handy to know how to make your own.  Garam Masala is perfect to use in korma or curry dishes and you can adapt it a little to suit your needs.

Time: 15min  Portions: 4 Tablespoons


1 Tbls Coriander seeds
1 Tbls Cumin seeds
1 Cinnamon stick (1 inch)
1.5 tsp Cardamom pods (seeds only)
1.5 tsp Whole Cloves
1 tsp Black pepper corns
1/2 tsp Fennel seeds
1/2 tsp Chili flakes
1/2 tsp Nutmeg


Place everything together in a small pan over medium heat for about 2min until fragrant, flipping occasionally.  Remove from heat and allow to cool slightly. Place in a pestle and mortar and grind until powdery.  That’s it! Done and dusted 🙂
