When it’s late at night, but you’re craving something sweet, this happens. It’s been THAT kind of week. I looked at what I had and threw together these (surprisingly) yummy muffins.
Time: 30min Portions: 18
1+3/4 Cup flour
2 tsp Baking powder
1.5 tsp Baking soda
2 Tbls Cocoa powder
3/4 Cup fine sugar
1 Slab dark baking chocolate (grate about 6 blocks and keep the rest for later)
1 Cup milk
1/3 Cup + 2 tsp Oil
2 tsp Peppermint essence
1/2 tsp Salt
1/4 Cup butter (melted)
3 tsp Icing sugar (for serving)
Preheat oven to 200°C. Mix together all the dry ingredients (except the icing sugar). Separately mix together all the wet ingredients and then combine everything. Mix well. Fill a muffin tray about half way to the top. Cut the rest of the baking chocolate into blocks and stick a block into every cup. Place in the oven for 20min.
Remove and sprinkle with icing sugar. As the muffins bake and rise, it envelopes the chocolate block, which melts and makes a gooey chocolate center. Sooooo good!
* If, like me, you realise half way through that you don’t have an egg in the house, you can substitute it with: 2 tbls water, mixed with 1 tsp oil and 2 tsp baking powder. Works like a dream!
