Beef Roast with Red Pepper & Vodka Sauce

This is such a quick and easy recipe if you feel like a smallish roast and don’t have hours to prepare it.

Time: 50min  Portions: 4-5

Ingredients:

750gm Beef Roast
1/4 Cup Balsamic vinegar
1/4 Cup Soya sauce
2 Tbls Brown sugar
1 tsp Crushed garlic
1 tsp Dried Rosemary
Salt, black pepper, BBQ spice & Paprika to taste
Olive oil (for searing the meat)

Sauce:
1/2 Onion (finely chopped)
1/4 tsp Red pepper flakes
1 tsp Crushed garlic
1 Red bell pepper (finely chopped)
1/3 Cup Vodka
1 Cup cream
1/4 Cup Parmesan cheese
Salt, Black pepper & dried Sweet Basil to taste

Method:

Preheat oven to 200°C. Spice the meat with salt, pepper, paprika, BBQ spice and half the Rosemary. Over medium high heat, heat a bit of olive oil and sear the roast for about 30 seconds on each side. Remove and place in an ovenproof dish. In the same pan, fry the garlic and add the Balsamic, soya, the other dried Rosemary and brown sugar. Mix well and bring to a boil until it becomes a bit thicker. Remove and pour over the roast. Place the roast in the middle of the oven (uncovered) and cook for 30min.

Meanwhile, over medium heat, fry the garlic until fragrant. Add the red bell pepper and onion. Fry for a couple of minutes. Add the vodka, cream, salt, pepper, red pepper flakes and basil. Bring to a boil and then turn the heat down to low. Allow to simmer for 5-10min, stirring occasionally. Add the Parmesan and stir well.

Once the roast is ready, cut it into slices and cover it in the sauce.

*If the sauce doesn’t have the right consistency, mix a Tbls of corn flour with 2 Tbls of milk and add it to the sauce. Or if you need it slightly runnier, add a dash of milk.
