OMG Chocolate Cake with White Chocolate & Cinnamon Sauce

I know, a whole bunch of recipes all say, “Best Chocolate Cake” or “Best Chocolate Cake EVER”. Bitch, please, they have nothing on this recipe!! This is by far the most delicious chocolate cake I’ve ever had. No jokes. This is so rich that I made it a single layer cake, ’cause OMG!

Time:  45min  Portions: 8

Ingredients

Cake:
1 Cup Flour
1 Cup Sugar
1/3 Cup Cocoa
1 tsp Baking soda
1 tsp Baking powder
1/2 tsp Salt
1/4 Cup Oil
1 Egg
1/2 Cup Buttermilk*
1 tsp Vanilla essence
2 Tbls Rum
1 Cup hot water

*If, like me, you don’t have buttermilk in the house, you can combine 1 cup of milk with 1/2 tsp Cream of Tartar or white vinegar. Mix well and allow to stand for 5min. (Remember that you only need 1/2 a cup though)

Icing:
180gm Butter (melted)
1/2 Cup Cocoa
1.5 Cup Icing sugar
1/4 Cup milk

Chocolate Cinnamon Sauce:
3/4 Cup Cream
200gm White cooking chocolate
1/2 tsp Cinnamon powder
1/2 tsp Vanilla essence
2 tsp Rum

Method

Preheat oven to 170°C. Sift together all the dry cake ingredients. In a separate bowl, mix together all the wet cake ingredients, except the water. Combine the dry and wet ingredients, mix and then add the hot water. Pour the mixture into a greased cake pan. Bake for 35min. Remove from oven and allow to cool completely.

For the icing, mix together all the ingredients and allow to stand until the cake has cooled. Cover the top and sides of the cake.

For the sauce, cut the white chocolate into pieces and place in a bowl. In a small sauce pan, bring the cream to a boil. Once it starts boiling, remove from heat and add to the chocolate pieces, stirring until the chocolate has melted. Add the vanilla, rum and cinnamon and mix well. Place in the fridge until ready to serve.
